Healthy taco recipe

It’s National Taco Day!

• 1 cup brown rice
• 2 tablespoons olive oil
• 400g minced beef/turkey
• 1 can black beans, drained and rinsed
• 1 can sweet corn, drained
• 3 Roma tomatoes, diced
• 2 avocados Taco

• 1 tablespoon chili powder
• ¼ teaspoon garlic powder
• ¼ teaspoon onion powder
• ¼ teaspoon crushed red pepper flakes
• ¼ teaspoon dried oregano • ½ teaspoon paprika
• 1 ½ teaspoons ground cumin
• 1 teaspoon sea salt
• 1 teaspoon black pepper

1. In a large saucepan of 2 cups water, cook rice according to package instructions; set aside.
2. Heat olive oil in a large pot over medium/high heat. Add minced beef/turkey and cook until browned, stir in taco seasoning. Drain excess fat.
3. Divide rice into meal prep containers. Top with beef mixture, black beans, corn, avocado, and tomatoes.
